Mexico, a generous land, a land rich of traditions and culture… While tequila is known worldwide, connoisseurs delight with sotol,  Mexico´s best kept secret. A secret of 800 years reserved for the hacendados and distinguished guests. The Hacienda Tabalaopa, a family jewel since it’s establishment in 1881, has historically embraced Sotol as the spirit of the region. Leading a new generation of Mexican spirits Vinomex presents Sotol Hacienda de Chihuahua, an ultra premium spirit.
It is an extraordinarily pure spirit with its own denomination of origin, highly valued for over 800 years for its rich flavors. It is an organic agavacea, wild-harvested in the Chihuahuan Desert of Northern Mexico which takes 15 years to mature. From there, José Daumas Gil de Partearroyo “Pepe”, our in-house master distiller, who received his Masters degree in enology at the world renowned École Nationale Supérieure Agronomique de Montpellier, France and whose résumé includes a plethora of well-respected brands such as Martell, Larsen & Moet
Chandon, meticulously oversees our state of the art production process which starts by slow steam cooking the wild-harvested plants, naturally ferment them with champagne yeast and distill the “aguamiel” in a double-column copper  still where our plata and platinum, genuine, non-stop travel, from the desert to you un-aged editions are directly bottled after being double and triple-distilled respectively.  On the other hand, the reposado, añejo, oropuro & H5 aged versions, undergo an aging process before being bottled in new french white oak barrels for up to one year, two years, at least two years, and at least five years respectively.
SOTOL
Sotol is elaborated with a wild agavacea variety termed Dasylirion which only grows in the Chihuahuan Desert of northern Mexico. The process of harvesting the plant in the wild remains the same today as it has been throughout the ages when the Tarahumara and Anazasi tribes appreciated this fine nectar, attributing to it medicinal and mystical powers. In the desert’s harsh climate, only the strongest and healthiest plants survive this natural selection process. Maturing on the mountainsides, the plant stores vast amounts of natural energy before it is ready to be harvested. Meanwhile, to guarantee the continued availability of this wonderful resource in its natural habitat, the producer of Hacienda de Chihuahua, Vinomex, has initiated an extensive conservation program, which ensures its preservation for future generations to come.

Wow! I have been in a tequila slumber for a while. I hadn't found much that was remarkable enough to get my creative juices going to bother reviewing, but this changed that. Technically this is not a Tequila. It is made from a different (undomesticated) variety of agave.   So it is technically a Mezcal, but it is nothing you´d imagine. With the help of the the classically trained and euro-experienced Master Distiller Jose Daumas, the "wild" plant creates a more complex palate of tastes than any tequila I´ve ever had.

The brightest star from this group [other than tequila agave spirits] was the smashing sotol [reposado] from Hacienda de Chihuahua. This I would buy and keep in the Spirit Journal liquor vault. The bouquet opens up in an alluring fashion, more floral than vegetal, more vanilla -like than spicy-- the middle stage passes see no diminishment in aromatic strength as the vanilla/oaky scent deepens and the flowery aspect drifts away -- the final nosing is one of harmony and stately elegance… there’s a genuine understated complexity to it that many tequilas don’t possess -- intriguingly different; on palate, the entry flavor is lush, almost regal as gentle, but deceptively characterful tastes of wood and dried fruit greet the taste buds -- the mid-palate turns more appropriately vegetal in an agave-like manner, complete with mild notes of pepper and soft dill; the aftertaste borders on being luxurious as long, deep flavors of sweet pepper and vanilla/oak enchant the palate;… to its immense credit, it does offer an alternative to tequila that’s simultaneously complex and elegant.” Spirit Journal –
